How to make the perfect pan roasted chestnuts

Winter is coming. Shorter days, longer nights and baltic temperatures are on the horizon… well, maybe not quite that cold, but the cooler air calls for cosy nights curled up in a snug throw on the sofa, gorging on seasonal foodie treats. 

From gingerbread to toffee apples, there are plenty of wintery delights to get your teeth into but nothing beats sweet, soft and cheewy chestnuts. Follow this one ingredient, two step recipe to rustle up the perfect pan-roasted chestnuts.  

Ingredients

  • 1kg chestnuts

Method

  1. Lay 1kg of chestnuts on their flat sides and cut a long slit or cross in the curved shell with a sharp knife – this should stop them from exploding! 
  2. Arrange them in a single layer on a cast-iron frying pan or skillet. Place the pan on the glowing embers of an open fire. Cook for 5-10 minutes, turning
    regularly. Cool slightly and enjoy!
