Easy Christmas cookies recipe

Christmas is all about good homemade food that brings the whole family together. So why not treat your loved ones to a batch of mouth-watering cookies, baked with a yummy blend of traditional festive spices – just follow these four easy steps.

Cook time 1 hour and 20 mins makes 24 cookies.

Ingredients

  • 100g butter
  • 250g soft brown sugar
  • 1 egg
  • 250g plain flour
  • 1 tbsp cornflour
  • ½ tsp baking powder
  • 2 tsp cinnamon
  • 1 ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground allspice
  • Almonds to decorate

Method

  1. Preheat the oven to 180*C/160*C Fan/gas mark 4. Line three backing trays with baking paper. Beat the butter and sugar together until creamy. Mix in the egg.
  2. Sift together the flour, corn flour, baking powder, cinnamon, ginger, nutmeg, cloves and allspice. Add the butter mixture and stir to form a firm dough. Wrap in clingfilm and chill in the fridge for 20 minutes.
  3. Roll out the dough to 3mm thick and cut out star and tree shapes. Divide between the baking trays. Top with almonds, if using.
  4. Bake for about 12 minutes until tinged golden brown. Leave on the tray for 10 minutes. Cool on a wire rack.
