Easy Christmas cookies recipe

Christmas is all about good homemade food that brings the whole family together. So why not treat your loved ones to a batch of mouth-watering cookies, baked with a yummy blend of traditional festive spices – just follow these four easy steps.
Cook time 1 hour and 20 mins makes 24 cookies.
Ingredients
- 100g butter
- 250g soft brown sugar
- 1 egg
- 250g plain flour
- 1 tbsp cornflour
- ½ tsp baking powder
- 2 tsp cinnamon
- 1 ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp ground allspice
- Almonds to decorate
Method
- Preheat the oven to 180*C/160*C Fan/gas mark 4. Line three backing trays with baking paper. Beat the butter and sugar together until creamy. Mix in the egg.
- Sift together the flour, corn flour, baking powder, cinnamon, ginger, nutmeg, cloves and allspice. Add the butter mixture and stir to form a firm dough. Wrap in clingfilm and chill in the fridge for 20 minutes.
- Roll out the dough to 3mm thick and cut out star and tree shapes. Divide between the baking trays. Top with almonds, if using.
- Bake for about 12 minutes until tinged golden brown. Leave on the tray for 10 minutes. Cool on a wire rack.
