French pâtissier Eric Lanlard shows us how to create this mesmerising galaxy mirror cake glaze, as demonstrated at The Cake & Bake Show.

Ingredients

  • 20g gelatine powder or leaves
  • 120ml water
  • 300g glucose syrup
  • 300g caster sugar
  • 150ml water
  • 200g condensed milk (sweetened)
  • 300g white chocolate
  • Edible black glitter
  • Food colour gels in black, blue, red and white (Available from Amazon)

 

Method

  1. Add 120ml water to the gelatine powder or leaves.
  2. Boil glucose syrup, sugar and 150g water. Remove mixture from heat and add gelatine. Add condensed milk, combine.
  3. Pour over white chocolate and let it sit for 2-3 minutes and let it melt the chocolate. Once the chocolate has softened, mix using a handheld blender.
  4. Pour mixture into a bowl with a strainer on the top. Split mixture between three bowls for different colours. The bowl with the colour for the base (dark blue) has to have more mixture compared to the other two.
  5. Add a few drops of blue and black food colour gel into the mixture until a dark blue is achieved. Add a few drops of red food colour gel to a small bowl to achieve a light pink and a bit of blue to another bowl to achieve a light blue.
  6. Place your cake on top of a little vase or a cup and place it on top of a baking tray, lined with baking paper so that when we're pouring the glaze it will be an easy clean-up.
  7. Use a candy thermometer to measure the temperature of your glaze. Stick it into the glaze and make sure it's 32 degrees celsius. If it's hotter than that, it's going to be too thin and won't stick on your cake.
  8. If it's cooler than that, it'll be thicker, clumpier and won't spread as evenly. If it cools down, pop in the microwave and stir for a few seconds. Use the midnight blue mixture and pour it on the top of the cake. Let it drip all over the sides to cover the whole cake.
  9. Take the lighter blue with a spoon. Pour across to get some striped details as well as some pink. Take a big spatula and carefully blend colours. Let dry for a few minutes then add some black glitter and splash of white colouring.
