Make the latest super food trend at home, a delicious and healthy soft drink alternative called kombucha.

Kombucha is a fermented sweet tea that is a great healthy replacement for your favourite fizzy drinks.
While you don’t need fruit to make kombucha, your scraps will add delicious flavour to your final fizz.
To make kombucha you will need to buy a SCOBY (Symbiotic Culture Of Bacteria and Yeast) – readily available online. We spoke to Oddbox who told us the best way to make your own kombucha.
Why is kombucha good for you?
Kombucha is the product of fermentation, a number of probiotic bacteria are produced which is great for your gut health and overall digestion. It's also known to reduce blood pressure and strengthen the immune system.
- 2 litres boiling water
- 6 tea bags (black or green tea)
- 180g cane sugar
- SCOBY (purchased online)
1. To make kombucha, make a sweet tea. Add 2 litres of boiling water to a heatproof container or pan with about 6 tea bags (we’ve used black or green tea but it’s important you don’t use herbal tea) and 180g of cane sugar.
2. Stir well and leave to cool to room temperature, then pour into a large, clean jar and place the SCOBY on top.
3. Cover the top of the jar with a piece of breathable material, like muslin, cheesecloth or a J-cloth, then leave to ferment for about 10 days at room temperature. Once it’s tasting slightly vinegary, it’s ready to drink!
